California Rolls 

Ingredients:


  • 1 cup (215g) Sun Rice Japanese Style Sushi Rice

 

  • 1 cup (250ml) cold water


  •  1/3 cup (80ml) low-fat mayonnaise


  •  2 hard-boiled eggs, peeled


  •  1 Lebanese cucumber, finely chopped


  •  1 carrot, peeled, finely chopped


  •  1 tablespoon hoisin sauce


  •  4 nori sheets


  •  1/2 ripe avocado, stone removed, peeled, sliced


  •  Salt reduced soy sauce, to serve




Method:


Step 1:   Place the rice in a large sieve. Rinse under cold running water, stirring occasionally to remove any                                                                                                                                          excess starch, until the water runs clear. Drain.


Step 2: Combine the rice and water in a medium saucepan over high heat. Cover and bring to the boil. Reduce heat to low and cook, covered, for 12 minutes or until water has absorbed. Set aside, covered, to cool slightly.


Step 3:  Meanwhile, combine the mayonnaise and eggs in a bowl. Use a fork to mash until smooth.


Step 4:  Combine the cucumber, carrot and hoisin sauce in a bowl.


Step 5: Place 1 nori sheet, shiny-side down, on a sushi mat. Use wet hands to spread one-quarter of the rice over the nori sheet, leaving a 2cm border at 1 short end.


Step 6:  Spread one-quarter of the egg mixture over the rice. Top with one-quarter of the cucumber mixture. Top with avocado slices. Roll sushi mat up firmly to enclose the filling. Repeat to make 3 more rolls.


Step 7:  Cut the sushi rolls into 1.5cm slices. Serve with soy sauce.





Mini Tuna Rolls

INGREDIENT:

  • 100g can light tuna with tomato and onion, drained


  • 1 tablespoon frozen corn kernels teaspoons low-fat mayonnaise


  • dinner rolls


  • 2 tablespoons grated light tasty cheese


  • 1/4 cup shredded iceberg lettuce


  • 1/2 small carrot, grated


  • 2 grape tomatoes, cut into quarters

Method:



Step 1


Preheat oven to 220°C/200°C fan-forced. Combine tuna, corn and mayonnaise in a bowl. Place rolls on a baking tray. Halve rolls lengthways, leaving 1 side joined.


Step 2


Spoon half the tuna mixture into each roll. Press down lightly. Sprinkle with cheese. Bake for 5 to 6 minutes or until rolls are golden and cheese has melted. Set aside for 2 minutes to cool. Top with lettuce, carrot and tomato. Serve.
